a recipe and a commercial

if quiche is good
and vegetable casserole is good,
then wouldn't quiche vegetable casserole be good good?

this phrase is from a wendy's commercial that david despises.
because of it, he puts together phrases all the time like:

if ketchup is good 
and ice cream is good,
then wouldn't ketchup flavored ice cream be good good?

then he laughs and mumbles to himself about what a stupid commercial it is.

anywho. this recipe is bomb-diggity
if you know what i mean.
and it's healthy
and vegetarian
and easy
and smells yummy
and is fun to make
etc..

VEGETABLE QUICHE CASSEROLE
3 medium zucchini sliced in thin circles
2 large red bell peppers coarsely chopped 
*(i use green because they are mr. pruett's fav)*
1 large yellow onion chopped to your liking
1 med eggplant peeled and chopped into 1 in cubes

 saute these veggies in 3 TBS olive oil and 2 cloves garlic
for 15 minutes


i love to saute anything! especially eggplant. and i actually use double the garlic.
don't forget to compost your biodegradable scraps!


since it is so freakin cold in this house, this is how i cook:
in my 10 year old uggs. way cute right?
and don't forget my hoot apron...

after sauteing, let veggies cool. 
in large bowl, whisk together 4 eggs and 1/2 cup fat free mayo
also add 4 oz. mozzarella cheese and 2 oz shredded parmesan
mix in cool veggies and pour into 9x13 pan.
sprinkle with another 40z. mozz and 2 oz. parm
*the recipe also adds 12 crushed ritz cracker here, but i never use them*

bake uncovered at 350 degrees for 25-30 minutes
or until a knife comes out clean

end result:
YUM

so what's better than 
a healthy recipe,
a cute apron,
warm uggs,
and a compost?

and im so impressed that the little one eats it too. i guess not all kids are as picky as mine!

Well. I stand humbled. If I were to have checked your blog a few days ago, I wouldn't have sent you the email asking you if you could send me the recipe. Thanks Shay for being so cute!
